Delicious Antidote to rich holiday foods - Quinoa Porridge
Lots of sweet, rich foods are around, especially this time of year. This Quinoa Porridge makes a tasty, healthy breakfast treat. See if you don't agree
1/2 cup quinoa
1/4 teaspoon cinnamon
1 3/4 cups almond milk
1 pinch salt (optional)
1/3 cup dried blueberries
Rinse the quinoa in a sieve or in repeated washings in a pan until the water is clear (otherwise there is a slight bitter taste).
Mix quinoa, cinnamon, almond milk, water and salt in saucepan. Cover, bring to boil, then cook over low heat, covered, until porridge is thick and grains are tender, about 25 minutes. Add more water if needed.
Stir occasionally, especially near the end to prevent sticking and burning. Stir in dried blueberries. Add 1 tsp. of sweetener if desired.
